Gazzanu
Cold-served lamb tongue is a Turkish delicacy. We are serving slices of lamb tongue with mustard sauce on top of a slice of bread.
Ingredients:
Lambvtongue, mustard, virgin olive oil, spices, salt
Wine Pairing:
Medium-bodied red wines like Fersun, Papaskarasi, Merlot are perfect matches.
What Does GAZZANU Mean?
In creating the names of our tapas, we were inspired by the archaic Hittite language.. “Gazı” means mustard, “lala” means tongue and “zanu” means cooked in Hittite language. The combination becomes GAZZANU on our WAYANA Tapas Menu.
