Karavar
Eggplant is a very popular vegetable for making light meals in Turkish cuisine. For Karavar, thin slices of eggplant are roasted and wrapped around fresh cheese filling. It is served on a slice of bread.

Eggplant, local feta and fresh cheese, parsley, dill, mint, tomatoes, virgin olive oil, spices, salt
Wine Pairing:
Karavar pairs best with Pinot Noir, Merlot, Cabernet Franc, Merzifon Karasi and Kuntra––light- and medium-bodied red wines.
What Does KARAVAR Mean?
In creating the names of our tapas, we were inspired by the archaic Hittite language. “Karawar” means “filled-in” in Hittite language, and so is the name of our tapas: KARAVAR
