Marusa Parhu

Pickled bonitos have a special place among Turkish appetizers. A specialty of cosmopolitan Istanbul cuisine, we are serving the pickled fish with red onion sauce on top of a slice of bread.

 

Ingredients:

Pickled bonito, red onions, virgin olive oil, spices, salt.

 

Wine Pairing:

Pairs very well with full-bodied Chardonnay and Viognier, preferably oaked.

 

What Does MARUSA PARHU Mean?

We have created the names of the tapas by referring to the archaic Hittite language. “Parhu” means fish, and “marusa” means red in Hittite, so the combination of the two words formed the name of the tapas.
