Maruzu
Maruzu is a take on hummus, the famous Middle Eastern appetizer. We first created Marzin by adding capia pepper to hummus and changing both its color and taste; and then we added local pastrami to turn it into Maruzu. It is served on a slice of bread.
Ingredients:
Local chickpeas, local pastrami, capia pepper, parsley, tahini, spices, salt.
Wine Pairing:
Red wine is an excellent choice for Maruzu whether light- or full-bodied. Syrah or Papaskarasi would be the best.
What does MARUZU mean?
In creating the names of our tapas, we were inspired by the archaic Hittite language. “Marusa” means red, “uzu” means meat in Hittite language. By combining the two words, we chose to name the tapas MARUZU.
