Marzin
Marzin is inspired by hummus, the famous Middle Eastern appetizer. We added capia pepper too it, which changed both the color and the taste and turned it into our own Marzin, which we serve on a slice of bread.
Ingredients:
Local chickpeas, capia pepper, parsley, tahini, lemon, spices, salt.
Wine Pairing:
Red wine, light- or full-bodied, is an excellent choice for Marzin. We think Syrah or Papaskarasi pairs best with it.
What does MARZIN mean?
In creating the names of our tapas, we were inspired by the archaic Hittite language. ZINAIL means chickpeas, and MARUSA means red in Hittite language. By combining the two words, we chose to name the tapas “marzin”.
