Panrusa
Pickled bonitos have a special place among Turkish appetizers. A specialty of cosmopolitan Istanbul cuisine, we are serving the pickled fish with red onion sauce on top of a beet slice.
Ingredients:
Beet, pickled bonito, red onions, virgin olive oil, spices, salt.
Wine Pairing:
Pairs very well with full-bodied Chardonnay and Viognier, preferably oaked.
What Does PANRUSA Mean?
In creating the names of our tapas, we were inspired by the archaic Hittite language. “Marusa” means red in Hittite language. We added the prefix PAN for beet in Turkish, and used the name PANRUSA for this tapas.
