Panzuzu
Like Zuzu, this tapas is made from date, which has a high natural sugar content, wrapped around in local pastrami slices and placed on goat cheese paste. But Panzuzu is served on a beet slice.
Ingredients:
Beet, Medina date, local pastrami, goat cheese, scallions.
Wine Pairing:
Light- and Medium-bodied red wine like Öküzgözü, Merzifon Karasi, Syrah, and Cabernet Franc.
What Does PANZUZU Mean?
In creating the names of our tapas, we were inspired by the archaic Hittite language. “Zulum” means date and “uzu” means dried meat in Hittite language. We added PAN prefix to reference beets in Turkish (pancar). Hence the name of the tapas: PANZUZU.
