As you get more familiar with grapes, you gradually learn which varieties are used for red wines, which for ros\u00e9s, and which for whites. But discovering a white wine made from a grape traditionally associated with red wine? Now that can come as quite the surprise.\nThis unexpected discovery has a name: Blanc de Noir \u2014 a French phrase meaning \u201cWhite from Black.\u201d<\/p>\n\n\n\n<p><strong>But why make white wine from red grapes?<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Showcasing Red Grape Character Without Color<\/strong><\/li>\n<\/ul>\n\n\n\n<p>Red-skinned grapes often offer more aromatic complexity and structure than white grapes. The solution? A white wine made from Kuntra grapes using Blanc de Noir techniques.<\/p>\n\n\n\n<p><strong>How Is It Made?<\/strong><\/p>\n\n\n\n<p>Here\u2019s the curious part: Almost all wine grapes, regardless of skin color, yield a pale yellow juice when pressed.* That\u2019s because the pigment resides in the skins, not in the flesh.<\/p>\n\n\n\n<p>In red winemaking, the juice is left in contact with the grape skins so that color and tannin are extracted. But in Blanc de Noir, the juice is separated immediately from the skins after pressing. The result is a wine with the look of a white, but often with a subtle signature of red fruit on the palate.<\/p>\n\n\n\n<p>Still, color alone doesn\u2019t make a wine. Grapes are picked before pigments fully mature, keeping the juice lighter and livelier.<\/p>\n\n\n\n<p><strong>Turkish Grapes Used in Blanc de Noir<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Karasak\u0131z (Kuntra)<\/strong><\/li>\n<\/ul>\n\n\n\n<p>Originating from Bozcaada, Karasak\u0131z \u2014 known locally in Greek as Kuntra \u2014 has thin skins, low pigment, and a lovely aromatic profile. Its naturally vibrant acidity makes it a strong candidate for white winemaking.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>\u00c7alkaras\u0131<\/strong><\/li>\n<\/ul>\n\n\n\n<p>Traditionally used for ros\u00e9s due to its low pigment, \u00c7alkaras\u0131 has also found success in Blanc de Noir styles. You can taste several examples from Denizli producers on the WAYANA menu.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Papaskaras\u0131<\/strong><\/li>\n<\/ul>\n\n\n\n<p>This endemic Thracian variety meets the criteria for Blanc de Noir production and is increasingly being used by Trakya-based winemakers \u2014 some of whom are also featured at WAYANA.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Kalecikkaras\u0131<\/strong><\/li>\n<\/ul>\n\n\n\n<p>While not a perfect fit in terms of pigment, Kalecikkaras\u0131 has been explored by innovative Turkish producers for white expressions as well. You\u2019ll find examples on our list.<\/p>\n\n\n\n<p><strong>Final Word<\/strong><\/p>\n\n\n\n<p>Wine is a realm of infinite possibilities \u2014 that\u2019s one of the reasons it\u2019s endured for millennia. Innovations in winemaking often begin as creative solutions to problems. Over time, thanks to curious drinkers and open-minded producers, they evolve into entirely new styles.<\/p>\n\n\n\n<p>Blanc de Noir is one such innovation. It may have emerged from the world of sparkling wines, but it has since found its own place as a distinctive and expressive category.\nAnd the best part?
