However, wine is exempt from the ingredient list requirement in most countries because it is classified as an “alcoholic beverage.” Almost the only thing we are accustomed to seeing on the label is sulfites, which are legally required to be stated as an allergen warning. But what about the rest?

Here are the “invisible” inhabitants of the label used to manipulate the texture, color, and durability of wine:

1. Fining Agents: Animal Proteins and Beyond

That brilliant, clear appearance of wine does not always occur naturally. Agents used to precipitate suspended particles that cloud the wine are indispensable to the production process, even if they are filtered out before the wine is bottled.

Egg Whites (Albumin): A traditional method, particularly used to soften the harsh tannins of red wines.

Isinglass: Derived from fish bladders, it enhances clarity and brightness in white wines.

Casein: A milk protein used to correct oxidation and lighten color.

Bentonite: A clay-based substance that stabilizes proteins. Unlike the others, it is vegan.

The question is: If a wine has been processed with egg whites or fish proteins, shouldn’t that information be shared so a vegan consumer can make an informed choice? This is exactly where the approach we call transparency begins.

2. Manipulators of Texture and Taste: Sugar and Oak

The methods used to alter the weight and taste of wine on the palate sometimes push the boundaries of “naturalness”:

Chaptalization (Sugar Addition): In cooler climates, sugar may be added before fermentation to increase alcohol levels when grapes do not fully ripen. This is not done to sweeten the wine, but to balance its alcohol content.

Oak Chips and Oak Powder: Instead of aging wine in expensive barrels, producers may add oak fragments or powder directly into tanks to simulate those familiar vanilla and smoke aromas more quickly. This is why you often see vague expressions like “oaked,” rather than clearly stating it was aged in oak barrels.

Declaring both chaptalization and the use of oak staves or chips is at the producer’s discretion. In fact, declaring the use of wooden barrels (oak, acacia, chestnut, etc.) is not mandatory either. However, producers generally prefer to state this on labels, assuming that the changes the wine gains from the barrel will positively influence the consumer.

3. Acid and Alcohol Balance: Chemical Intervention

Nature does not always provide a balanced grape. In this case, chemistry steps in:

Tartaric Acid: Added to restore freshness and acidity in grapes grown in warm climates.

Water Addition: When alcohol levels rise too high, water may legally be used in controlled amounts to dilute and stabilize the wine.

Mega Purple: Perhaps the most controversial of all. This concentrated grape extract is used to deepen color and enhance texture, giving wines a richer, darker, more “jammy” appearance. Even tiny amounts can dramatically alter a wine’s visual identity. Mega Purple alone deserves its own investigation.

4. Preservatives and Stabilizers

Sulfur Dioxide (SO₂): Used since Roman times, this substance protects wine from oxidation and spoilage. Its presence on labels is mandatory only when it exceeds allergen thresholds.

Gum Arabic: A natural polysaccharide added to improve mouthfeel and prevent sediment formation.

“Clean Wine” Marketing: Tactic or Consumer Right?

Returning to the example of Cameron Diaz and Avaline; many authorities in the wine world find the term “Clean Wine” misleading. Because the word “clean” is seen as a marketing strategy implying that all other wines are “dirty.” However, a quality producer will use few or none of these substances, or keep them to a minimum, even if they don’t write it on the label.

It is a matter of honesty. Many responsible producers use few or none of these interventions. But whether they do or not, the deeper question is whether they are willing to share that information.

Why is a Producer Who Embraces Transparency Important?

When a producer voluntarily shares their ingredients, they tell us the following:

Meticulous Work in the Vineyard: Grapes grown in balance require fewer corrections in the cellar.

Ethical Responsibility: Consumers with allergies or ethical concerns deserve clarity.

Commitment to Terroir: If wine is meant to reflect place and year, every external addition blurs that reflection.

What Will Change in Your Choices?

The next time you drink a glass of wine, will you wonder how much of the 2% character in that 150 ml volume comes from the “grape” and how much comes from “crop correcting agents”? Perhaps the best wine is not the one with the longest ingredient list, but the wine from a producer confident enough in its naturalness to not hesitate in sharing that list.

Transparency is beyond being a marketing trend; it is the strongest bond of trust between the producer and the consumer. As WAYANA, we will continue to trace the honesty in every drop of that 2%. In your future choices, how about looking a little closer at the story behind your glass?

Because sometimes, what matters most is what the label chooses not to say.

REGULATORY NOTE: Wine Labeling and Legislation in Türkiye

Wine production and labeling in Türkiye are regulated under the Turkish Food Codex, administered by the Ministry of Agriculture and Forestry. Yet even within this framework, the label does not tell the full story.

Mandatory Declarations:

Sulfites: If sulfur dioxide is present above 10 mg/L, the statement “Contains Sulfites” is a legal requirement (as an allergen warning).

Alcohol Content: Alcohol amount by volume (ABV).

Origin and Producer Information: Place of production, business registration number.

Volume: Bottle quantity (e.g., 75cl, 37.5cl, etc.).

Non-Mandatory Declarations (Processing Aids):

Fining Agents: Substances such as egg whites, casein, or bentonite used during production are not included in the ingredients list, as they are considered to leave no residue in the final product.

Acidity Regulators: Substances like tartaric acid, etc., added to the wine.

Oak Products: Oak chips or powders used as an alternative to barrels.

Yeast and Nutrients: Auxiliaries that initiate and support the fermentation process.

Stabilizers: Substances such as Gum Arabic that prevent the wine from spoiling in the bottle.

Summary: According to current regulations in Turkey, a producer is not required to declare “auxiliary substances” used to add character to the wine or correct a technical flaw in the ingredients section. This situation makes transparency a producer’s preference rather than a legal requirement.

When you buy a packaged biscuit, you can read everything inside it, from emulsifiers to preservatives.
