Just like tannin analysis, next-generation UPLC-MS\/MS chromatography has transformed acid analysis from a destructive process into a descriptive one.<\/p>\n<ul>\n<li><strong>Natural vs. Intervention:<\/strong> Beyond tartaric and malic acids, the delicate balance of lactic and succinic acids formed during fermentation provides a digital record of the wine\u2019s journey from vineyard to glass.<\/li>\n<li><strong>Diagnosis in 3 Minutes:<\/strong> The quality of malolactic fermentation or external acid adjustments can now be detected within minutes\u2014without altering the molecular structure of the wine.<\/li>\n<\/ul>\n<p>How are the \u201cdigital traces\u201d of acids followed?<\/p>\n<p>Think of the system as a barcode scanner:<\/p>\n<ol>\n<li><strong>Accelerated Race (Chromatography):<\/strong> The wine sample is pushed through a fine column under high pressure. Each acid (tartaric, malic, lactic, etc.) moves at a different speed, effectively separating from the others.<\/li>\n<li><strong>Mass Measurement and Identification:<\/strong> Each molecule entering the mass spectrometer is weighed.
