We devoted the last part of our Natural Wines article series to the wines and producers at the tasting we will hold on Sunday, March 10th. We have listed the products in alphabetical order of manufacturers.
Barbare / Nötr Natürel Merlot
Barbare, which produces grapes grown in its vineyards in Tekirdağ Yazır Village, is a producer whose wines we have known for more than 20 years and whose wines we have included in our menu. Neutral is the producer's only product under the natural wine category. Barbare is one of the two producers using Merlot grapes in the tasting. In this respect, it will allow us to see how the grape changes in different terroirs and hands.
Chamlija / Kehribar Narince-Albarino
Chamlija, which produces grapes grown in the vineyards of Kırklareli's Büyükkarıştıran Village and its surroundings, has a wide range of products. Chamlija's only natural wine is the Kehribar Narince-Albarino blend included in the tasting. The dominant grape (85%) is Narince. Chamlija performs fermentation in an open chamber during the production process, and twice a day, team members in special clothing enter the chamber and crush and mix the grapes. In the production of amber wine, grapes are processed as whole bunches, with their stems.
Claros / Wild Fermented Merlot
Claros, which only uses Merlot grapes in its vineyards in Çile, Menderes district of Izmir, produces all of its products with natural yeast. We see different variations of the Merlot grape among the Claros varieties. Blanc de Noir white wine made from Merlot, which we do not often encounter from other producers, is one of them. Since they do not apply filtration, they have warnings about sediment on their labels. Claros has three other wines in the WAYANA Natural Wines Menu, in addition to the wine in the tasting.
Gelveri / Keten Gömlek
Gelveri is a small producer who has managed to create a unique wine world in the Güzelyurt district of Aksaray province. Of course, what we mean by small is the amount of production, otherwise what they do is huge. The most important feature of Gelveri is that it produces only natural wines. They only use natural yeast and their preference for fermentation is clay jars. Production quantities are limited to the harvested amount of grape varieties they deem appropriate to process. There are no wine varieties other than the region's endemic grapes. In this tasting (as far as we know), we only include Keten Gömlek wine produced by Gelveri. Gelveri has a total of seven wines in the WAYANA Natural Wines Menu.
Paşaeli / Kabuğunda Çakal
Paşaeli, a producer from Izmir, is one of our most hardworking and sensitive producers regarding our endemic grapes. This understanding has been adopted by the entire team, starting from the top manager. With their Peel series, they take their interest in endemic grapes one step further with a natural wine approach. Only Paşaeli processes the Çakal grape, which we included in the tasting. The jackals, who discovered this feature of the early ripening Çakal grape, are the first to taste the new harvest of the grape. The other three wines of the Kabaklıda series are also included in the WAYANA Natural Wine Menu.
Selefkia / Natural 21 Aküzüm
Selefkia, located in the Silifke district of Mersin, uses some of the grapes grown on the high plains of the Taurus Mountains to make natural wine. Only natural yeast is used in the production of the wine, and the grape must comes into contact with the skin for seven days. The facility's chrome tanks are used for fermentation. The grapes for the wine are collected from 80-year-old vines; This adds a different depth to the wine. In the production process where filtration is not applied, the sediment is separated by transfer.
Tafali / Kalecik Karası
Tafali, which makes wine from grapes grown in the vineyards adjacent to Kızılırmak in Ankara's Kalecik district, only includes Kalecik Karası grapes in its vineyards. This boutique business, created by two agricultural engineer entrepreneurs who are passionate about wine, produces two Kalecik Karası, one rosé and the other red. However, the number of wines processed with natural yeast is limited. In addition to Tafali's red wine in the tasting, rosé wine will also be included in the WAYANA Natural Wines Menu when its new vintage is released.
Tasheli / Kehribar Göküzüm
Producer Tasheli from Mersin makes his wines with grapes grown in his vineyards high on the southern slopes of the Taurus Mountains, at the intersection of Sason and Göğden canyons. Göküzüm, one of the endemic grapes of the region, is harvested from half-century-old vines with deep roots. Only natural yeast is used when processing grapes. The wine reaches its amber color through skin contact, which takes place in chrome tanks and lasts for 15 days. Kehribar Göküzüm is Tasheli's only natural wine.
