It's not so easy to deduce what they are by looking at the words, is it? Our title is the name of four of the grape varieties that grow on our land and are the children of Anatolia. If we asked you to make a guess, how many types of grapes do you think grow in these lands? Twenty? How about fifty? face? Without continuing this as a game, botanists say that we have a grape treasury ranging from one thousand two hundred to six thousand six hundred with its Thrace and Anatolia. In other words, it takes three to five years for a grape lover to taste a variety every day and find the best grape for himself.
When we were starting to work on the wine menu of our previous brand, BEPPE, in our store in Moda, we thought that we were facing a hill like Çamlıca Hill, and we thought, "We have a lot of work". After a while, we started to think that it was in the size of Mount Ararat. When we completed our first year and realized its true size, we realized that the event was on the scale of the Himalayan mountain range and surrendered. If we continue to work without running out of breath, we guess that we will probably have an idea about wine in a few generations.
Wine has not been a permanent part of daily life in these lands, at least for the last millennium, due to religious beliefs. As a result, the wine grape has lost its feature of being a product valued by the farmer. With the wine renaissance of the last forty years, our grapes have found themselves in a war to change their fate.
In our first wine tastings, we encountered examples that clearly express the foreign origins of the wines in the grape names: Chardonnay, Sauvignon Blanc, Cabernet Frank, Pinot Noir. Among them, there were those with more familiar names: Öküzgözü, Boğazkere, Kalecik Karası. What was the difference between these wines? In the past of grapes, which are difficult to pronounce, there was a struggle to add value that cannot be measured with money, which was spent over the centuries to improve their qualities. Those grapes came to the value of thousands of dollars in bottles at auctions today, with a collaborative development culture spanning years. In the wines you tasted, you were meeting with the taste of both the grape and the refined results of the winemaking process.
In our wine menu, we include both grapes that contain the know-how of these centuries, and grapes from these lands that come from behind but do not break with the race. We also use a method that makes positive discrimination. At the top of the sections in our wine menu, we have local grapes, while our guests make their selection, firstly the wines prepared with the grapes of this land greet them. Do not overlook this detail when making your wine selections.
