Hadduzu

In the past, one of the best ways to preserve food was to dry it. Our dried tomato sauce demonstrates how age-old practices still have a place in today’s kitchen. On the sauce, we place smoked and chopped Bosnian pastrami. Served on a slice of bread.

 

Ingredients:

Bosnian pastrami, dried tomatoes, virgin olive oil, spices, salt.

 

Wine Pairing:

Full-bodied Acıkara, Barburi, Tempranillo, and Bordeaux Blend are perfect matches.

 

What Does HADDUZU Mean?

We have created the names of the tapas by referring to the archaic Hittite language. A complex set of Hittite words which mean dried food and “uzu” which means meat in Hittite gives us the name of the tapas: HADDUZU.
