Nepis
One of the gastronomical delights of Turkey is a local blue cheese of Niğde province. The cheese has a unique aroma and taste coming from the ageing process, during which the cheese is kept inside deep caves to mature. We place the cheese on top of a honey and onion sauce and serve it on a slice of bread.

What Does NEPIS Mean?
In creating the names of our tapas, we were inspired by the archaic Hittite language. The original name of the cheese in Turkish is Niğde Sky Cheese. “Nepis” means sky in Hittite.
