Zuzu
Date, which has a high natural sugar content, is wrapped around by local pastrami slices and placed on goat cheese paste, sprinkled with chopped scallions. Served on a slice of bread.
Ingredients:
Medina date, local pastrami, goat cheese, scallions.
Wine Pairing:
Light- and Medium-bodied red wine like Öküzgözü, Merzifon Karasi, Syrah, and Cabernet Franc.
What Does ZUZU Mean?
In creating the names of our tapas, we were inspired by the archaic Hittite language. “Zulum” means date and “uzu” means dried meat in Hittite language. Hence the name of the tapas: ZUZU.
