WAYANA 101: THE JOURNEY OF A GRAPE

The guests who make up WAYANA’s community of wine lovers are not all the same. Within this group, the largest segment consists of those who are passionate about wines that suit their palate and are happy exploring their favorite style in different expressions. 

Some prefer rich, full-bodied wines; others lean toward aromatic, lighter ones. Some mostly enjoy whites, others reds. Each follows their personal taste, navigating through our wide selection to find the bottles that speak to them.

A second group makes their choices based on how the wine is made. For them, production method comes first — and natural wines are their priority. They gravitate toward our Natural Wine Menu, which offers nearly a hundred examples.

But the wine lovers we’re focusing on in this piece have a different kind of curiosity. They want to understand what happens behind the glass — to trace the story of a grape from the vineyard to the bottle.

For them, we designed an experience that answers exactly those questions: WAYANA 101.

What WAYANA 101 Is About

WAYANA 101 sheds light on the journey of the grape, exploring the three core elements that make wine what it is:

  • The Grape and the Vine
  • The Terroir
  • The Human Element

The program concludes with two final parts: The Winemaking Process and The Components of Wine.

THE GRAPE AND THE VINE

We begin by recalling that vines have existed on Earth for around 60 million years. From wild vines to today’s cultivated species, we trace how the grape evolved and what makes a wine grape unique.We’ll look at the major internationally recognized varieties and then examine Turkey’s remarkable position in terms of grape diversity — highlighting some of the country’s most distinctive local varieties along the way.

TERROIR

Our second key theme is the concept of terroir — a term that’s as deep and layered as wine itself. We’ll explore how each component of terroir (climate, soil, elevation, slope, and human touch) shapes the grape, and in turn, the wine. Participants begin to sense how each factor leaves its own signature on the final character.

THE HUMAN ELEMENT

Modern viticulture benefits from advanced tools, technology, and data, but ultimately it still depends on human judgment and craftsmanship. In this section, we’ll explore how the hand of the grower and the vision of the winemaker transform potential into excellence. The focus here: understanding the irreplaceable role of the human factor in fine winemaking.

THE WINEMAKING PROCESS

From planting and yearly vineyard care to harvest and bottling, this section walks participants step by step through production. 

We’ll discuss how timing affects quality — what happens when grapes are picked too early or too late — and observe how each stage leaves its mark on the final wine. Differences between white and red winemaking, and between natural and conventional methods, will also be highlighted, including the key physical and chemical processes that shape structure and flavor.

THE COMPONENTS OF WINE

Acidity, sweetness, alcohol, and tannin — and their combination, body — are the pillars of wine evaluation. In this section, we’ll examine how each interacts with our senses and demonstrate their effects through guided tasting.

THE FLOW OF THE TASTING

WAYANA 101 blends storytelling and tasting into a single experience. We taste twelve wines selected to illustrate specific traits: one highlights acidity, another tannin, another sweetness, another alcohol or texture.

Each pour becomes a lesson in how a single component can define a wine’s identity. In the second half, we move to an open tasting format. The questions that naturally form in participants’ minds during the first part turn into the conversation topics of the second. Some of those questions even find their own answers in the glasses that follow.

Of course, wine is a vast and endless subject. Every concept we touch on in WAYANA 101 could be a field of study on its own — one that dedicated professionals spend years mastering. That’s why we describe WAYANA 101 not as a destination, but as a beginning.

A FINAL WORD

WAYANA 101 is the first step of this series. It introduces the intricate, multi-layered world of wine — a world that continues with WAYANA 102, where we’ll dive deeper into the topics introduced here and expand into new ones. 

WAYANA 102 will explore areas such as sparkling, sweet, and fortified wines; the evolution of barrel aging; and the impact of changing climate on vineyards and winemaking. 

The “wine knowledge virus” is a dangerous one — once it infects you, it never really leaves. Luckily, it’s the kind of virus that adds depth to your life.
