We have already announced that we have made a radical change in our wine service at WAYANA, our wine house in Kadıköy: Now you can order all our wines by the glass. You can imagine how happy we were to see that the wine lovers who received the news of this application shared our excitement. But we also have many experiences that make people smile.

 

In one of them, I saw that a wine lover from WAYANA's friends made a selection according to the grapes from the wine menu he opened in front of him, and I asked him if I could help him with his choice. I saw that our friend, who we knew was very enthusiastic about the fact that all the wines were served by the glass, focused on the bottle selection even though he was alone, I was surprised and asked why he had chosen the bottle. She said solemnly that a single bottle might be too much, while she was worried that the wine would be wasted if she took a glass. That's when I realized what a naive line he was standing on and explained how we practiced the goblet.

 

The main condition for the wine to preserve its quality is to prevent its contact with air. This protection is provided by the cap of the bottle. Producers do this process with the help of automatic machines when the filling process of the wine into the bottle is completed. They use various types of caps in capping the bottle. In recent years, we have also observed that flip-open caps and plastic caps are becoming more and more common.

 

One of our criteria for choosing the wines that we include in the WAYANA Wine Menu is that they are closed with a natural cork lid. Because natural cork has several very valuable properties. One of them is the natural flexibility of the cork and when it comes into contact with the wine, it expands and prevents contact with air by making a full closure. This is why we keep our wine bottles flat, the wet cork expands, preventing air from entering the bottle.

 

When the glass order comes, we take a glass of wine from the bottle with a kind of syringe without removing the cork from the mouth of the bottle. When we remove the syringe, the space inside the cork is closed thanks to its expansion feature. In addition, thanks to these special syringes, a special gas that has no odor and taste effects is injected into the bottle and it is ensured that there is no space in the bottle that air can enter.

 

With the above explanation, you may get the impression that this process consists of the saying 'tool works, hand is proud'. This statement is correct, but incomplete. Because the most important actor of this process is our sommelier friend who makes this preparation. The service process, which is carried out with great care and meticulousness, takes place with a long-lasting hands-on training. WAYANA has two chances: The first is our constant monitoring of wine technology as a habit that started in the BEPPE era, and our determination to invest in the equipment that has emerged with developments.
