NOTICING FRUIT WHILE DRINKING WINE

"When I take a sip from my glass, it is impossible not to be impressed by the taste of plum. What about the lime that comes from behind?"

The imaginary expression above must be the level that all wine lovers, who are curious about wine but are just at the beginning of the process of discovering the secrets of wine, define as nirvana. Wine experience is a process that spans many years and, admittedly, never ends. So, a good wine lover should keep in mind that he is an enthusiast who chooses to be a lifelong student.

Fruits constitute one of the most important flavors in wine. The easier first step in deciphering fruit flavors should be to focus on fruit groups. We have divided this article into fruit groups and which wines we frequently encounter. Although it is not easy to find the lime at the beginning of the article, finding the group it is affiliated with can make life easier.

First, we will look at fruit groups in terms of red wines and then move to the whites.

It would be correct to group the fruit flavors we encounter in red wines under three headings:

1- Red Fruits:This cluster, consisting of fruits such as cherries, raspberries and strawberries, is more common in light-bodied wines made from grapes such as Pinot Noir, Gamay, Sangiovese, Çal Karası and Fersun.

2- Black Fruits:We see blackberry, blueberry, currant and sour cherry flavors in medium and full-bodied wines made from grapes such as Cabernet Sauvignon, Tempranillo, Merlot, Malbec, Öküzgözü, Merzifon Karası.

3- Dried Fruits:Dried apricots, raisins, prunes and dates flavors that we encounter in red wines appear when the wine matures. Continuing micro-fermentation during ripening ensures that fresh fruit flavors gradually transform into dried fruit flavors.

Even though it is not possible to pinpoint the wine while tasting it, discovering the reflections of fruit groups makes the wine lover's job easier. Next time you sip your red wine, don't forget to question which fruit group you perceive. When it comes to white wines, focusing on different fruit groups in terms of their aroma and taste, as in red wines, makes pairing easier. The number of main groups in white wines is higher than in red wines.   1- Green Fruits:This fruit group includes apples, pears and grapes. Chardonnay, one of the internationally widespread grapes, and Narince and Sultaniye, two of our country's endemic grapes, are among the most preferred white wines with their apple and pear flavors.   2- Fruits in the Citrus Group:There are wines in which we feel intense reflections of lemon, lime, tangerine, grapefruit, bitter orange and orange fruits. Sauvignon Blanc, one of the most preferred white wines in the world, is one of these wines. Citrus associations are felt in the wines made from our Ten Göynek and Aküzüm endemic grapes.

3- Stone Fruits:Fruits such as peaches, apricots, nectarines and plums are in this group. Wines made from the Riesling grape of German origin are good examples of this category.   4- Tropical Fruits:Exotic fruit flavors such as banana, mango and pineapple are also encountered in some wines. Tropical fruits come to the fore in French Semillon, German Gewürtztraminer and our Misket wines.
