When we say germ or microbe, we don't think of anything good, we usually take it for sure that we will encounter the disease in the end. But of course there are also good microbes. The coexistence of these microbes with other living organisms benefits both sides: the microbe maintains its vitality, and the other living thing it infects also benefits from it. This is how Botrytis Cinerea, which is called the "noble mold", is related to grapes.

 

Noble mold likes moist environments. But if humid environments turn into wet environments, the noble mold takes off its cloak and turns into “grey mold”, which is its true face, and then the grapes in the vineyard have no chance to survive. In this respect, the noble mold is a creature that must be followed and managed, it does not forgive mistakes.

 

Grapes must be ripe for the noble mold to infect the grapes. If, after being infected with mold, dry weather prevails in the area where the vineyard is located, then our grapes begin to dry partially on the branch and the effect of noble mold will begin. Noble mold makes tiny holes in the skins of grapes in clusters. The grape juice in the grains starts to evaporate under the influence of the sun and the sugar content in the partially dried grapes gradually rises. From now on, the grapes must be collected at the right time with a meticulous follow-up. You can't get enough of the delicious sweet wines made from these grapes.

 

According to historical records, wine was first made in Hungary from grapes exposed to noble mold. Today, the dessert wines of Hungary's Tokaj region are world-renowned. The famous Sauternes wine of the French is another well-known wine produced from noble moldy grapes. The French harvest the grapes affected by the noble mold by picking them one by one. This process is called 'tris', which means choice in French.

 

Let's end the article with a story about the noble mold wines of the Germans. In order to prevent the spread of mold infested vineyards, the decision to cut the vines had to be made by Heinrich von Bibra, the vineyard owner in charge of the Rheingau wine region. In such cases, a messenger was sent to report the situation and the vines were cut when written approval was received. When the messenger who set off in 1775 was robbed on the road, the notification of the decision was delayed by three weeks and it was too late. The moldy grapes that were collected thereupon were distributed to the villagers, thinking that they were spoiled. When the surprising taste of the resulting wine was noticed, it became one of the favorites of the wine producers, commonly known as 'spatlese' (late harvest wine) in the following years.
